Staff raising money through Open Challenge Events?

Hi all
I am relatively new to the fundraising world working for a leisure trust in Cumbria.
I want to recruit a member of staff already working within my organisation to be a 'Challenge Champion' who would join an one of these open adventure challenge events to raise money for our charity. Has anyone any experience of this, or know of any pitfalls, legal or otherwise, that might challenge me?! Is it do-able?
I would envisage that in return for the member of staff doing the challenge, our organisation would offer an incentive - something along the lines of 50% of the time off needed to complete the challenge - NOT time off to fundraise though.
